Barolo

100% Nebbiolo

Barolo has been called the "king of wines," and the "wine of kings." It is one of the world's best wines and is made from only the very best Nebbiolo grapes, grown near the town of Alba in Italy's Piedmont. Barolo, a robust red, is full bodied and very dry. It's high in acidity, alcohol and tannin. The aroma is similar to ripe strawberries, tar, roses, violets and truffles. It is a chewy wine.

If Barolo is produced in the traditional style, it can be "hard" when young. It needs to be aged in order to become "mellow." In fact, production rule stipulates that Barolo is not Barolo until it has aged for at least three years at the winery. If it is to be called, "Riserva," it must age at least five years. Barolo is best with additional aging and is often left to age for between ten and twenty years after the vintage year.

If you plan on serving a Barolo, open it at least an hour ahead of time to allow for proper aeration. Barolo is best served with food. It nips the taste buds and enhances an exquisite dining experience.

Always buy Barolo from a reputable producer. The basis of good Barolo is the production method. Some producers today are trying to shorten the aging process. They cut the fermentation period and use French oak barrels to age the wine. Though the end result is passable, these wines are not of top quality.

Beaujolais

A Fruity Character

How does a region choose a grape? Back in July 1395, the "Gamay" grape was forbidden to be used in Burgundy. Beaujolais, the southern neighbor, decided it should use Gamay and make its wines from this grape. And thus started a differentiation that continues to this day. Today, 98% of this region is planted with Gamay; the rest is Pinot Noir and Chardonnay.

The Beaujolais region is made up of 55,000 acres, more than the three other regions of Burgundy combined. Beaujolais itself is split in two by the Nizerand River - north is Haut-Beaujolais with light soil. This produces the Beaujolais-Villages wines and all ten Crus. South of the river are the Bas-Beaujolais.

Beaujolais Beaujolais is very light, fruity, and easy to drink. It typically has aromas of pear, banana, and like smells. Because of its easy drinkability, there is a lot of cheap, jug wine - normally served in 46cl (note this is NOT 1.2 gallon as the Oxford Wine Guide says!) containers. On the other hand, the Crus produce fine quality, crafted wines. Beaujolais Nouveau is the first output from each harvest - ready exactly on the Third Thursday of November each year. It's a celebration across the world, as people gather to taste the first Beaujolais of the new season.

Around half of Beaujolais is from Bas Beaujolais, at 10% alcohol. A small amount is Beaujolais Superieur, 10.5% alcohol. One quarter is Beaujolais-Villages, and the remainder is split beteween other varietals. Beaujolais has a distinct wine making method - a combination of carbonic maceration and chaptalization, or adding sugar to boost the alcohol content.

Beaujolais owes much of its fame to Georges Duboeuf, who promoted it far and wide. He controls 10% of Beaujolais production. Louis Jadot also creates a fine wine.

How long can you keep a Beaujolais for? Beaujolais Nouveau should be drunk IMMEDIATELY - it is barely even wine, being released so soon after the harvest. Most Beaujolais and Beaujolais-Villages should be drunk within 2 years. Some of the best crus can last 3, and some made in more 'traditional' winemaking styles could last up to 10 years if it's a really good vintage.

Bordeaux

The Connoisseur's Wine Capital

Bordeaux is the most famous and highly coveted wine blend in the world. Like many wines with a long history, there's a lot to learn, so we're here to just cover the basics.

While there are both red and white Bordeauxs, the name Bordeaux is primarily associated with the red wine blend. Red Bordeaux is a red wine that is always made from blending Cabernet Sauvignon wine and Merlot wine together, though the proportion of each depends on the location of the winery that made the wine.

In the Bordeaux region of France, where the wine is made, the Gironde estuary cuts through the center of the region creating two banks: a left bank and a right bank. It is a winery's location on either bank that determines the proportion of Merlot to Cabernet inside each wine. If the winery is located on the Left Bank, the blend created will have more Cabernet Sauvignon than Merlot. If the winery is instead located on the Right Bank of the river, the wine will have more Merlot in the blend than Cabernet Sauvignon. This determination also allows us to make a few generalizations about the wine depending on the bank on which it was created.

The success of Bordeaux can be boiled down to one simple trait: it's location. Bordeaux not only possess an ideal climate and soil for growing grapes, but, due to the fact that it's served as a major port city for centuries, it also gave the local winemakers the opportunity to access different regions of the world via its visitors. Unlike Burgundy, another famous wine region that is completely landlocked, Bordeaux was able to capitalize on the ships and wealthy merchants that filled its port daily, always sending them off with wine.

As wealthy merchants returned to their home countries with wine, Bordeaux's acclaim spread. Wealthy trading classes in Great Britain and the Netherlands, having access to the merchants traveling back and forth to Bordeaux, began collecting the wine and it was from this point on that Bordeaux cemented its reputation as one of the fine wines of the higher class.

Thanks to its popularity, there is so much Bordeaux on the market that bottles can be found at all levels of quality and price. Very good Bordeaux from smaller producers that is meant to be drunk now can be found for between $15 and $25, while age-worthy Bordeaux from the top producers can be found starting at $30 and above.

The history of Bordeaux makes it a wonderful wine for a special occasion, whether that occasion is celebrating a life event or simply celebrating a night in with the ones you love. Whatever the case, we believe Bordeaux is a wine meant to be enjoyed with others.

Burgundy (Red)

France's Reigning red

Burgundy is the name of a wine region in France; however, most of us are familiar with the name not because of high school geography, but because it’s what we call the famous red and white wine the region produces. These wines are considered to be the best money can buy, which is why they’re some of the most expensive in the world. But before we explain why so many people feel this way, we’re going to briefly explain red and white Burgundy.

Red Burgundy is wine that is made in the Burgundy region of eastern France using 100% Pinot Noir grapes. That’s right, red Burgundy is just a Pinot Noir. White Burgundy is also made in Burgundy, but, since it is white, it is made from 100% Chardonnay grapes. That’s it. Pretty simple, right?

So now that we understand that both red Burgundy and white Burgundy are simply other names for Pinot Noir and Chardonnay, let’s understand what makes these wines more coveted than versions of Pinot Noir and Chardonnay from other parts of the world.

What makes both Burgundian wines so special, is that Burgundy, more than probably any other wine region in the world, is completely influenced by its terroir. Terroir is a sense of place, it means that when you drink a wine, you completely taste the region where the wine was made. Most simply, terroir is the concept that the land from which the grapes are grown imparts a unique quality that is specific to that single vineyard.

Over the centuries, Burgundy has become known for being the best land in the world for producing both Pinot Noir and Chardonnay, and it is for this reason that Burgundy wines have received such acclaim. In fact, the quality of the land is considered to be so important to the creation of red and white Burgundy, that inside the Burgundy region, vineyards are classified by four levels, depending on how exceptional it is believed one’s plot of land is for growing the grapes.

Burgundy (White)

Chez Chardonnay

White Burgundy, with a few exceptions, is 100% Chardonnay. They have been growing Chardonnay in Burgundy since the 12th century, about 1000 years. No wonder, then, that White Burgundies are considered to be some of the finest Chardonnays in the world.

The most famous of the White Burgundies come from the Grand Cru vineyards of Montrachet, (Le Montrachet, Batard Montrachet, Bienvenue Batard Montrachet, Crios Batard Montrachet and Chevalier Montrachet) and the village and premier cru vineyards of Puligny-Montrachet, Chassagne-Montrachet, and Meursault, all in the Cote de Beaune.

White Burgundy production encompasses more than just that small area. The great Chardonnay wines of Burgundy begin in Chablis to the far north, and spread through the Cote d'Or, the Cote Chalonnaise, and the Macon in the south.

The traditional style of Chardonnay in Chablis is a dry, crisp, minerally wine. As one travels south, the wines generally pick up weight and richness, without the tropical flavors found in many New World Chardonnays, reaching their peak in the Cote de Beaune. More southerly vineyards are similarly styled, but rarely reach those heights in terms of concentration or complexity. The wines of the Macon are the most affordable White Burgundies, and those coming from villages such as Pouilly Fuisse, Pouilly Vinzelle, and St. Veran are often stunning in their own right.

Cava

Bubbling Back Up

A lot of people want to know more about Cava. Is it Champagne? What is the difference between Cava and Champagne?

First it is necessary to understand Champagne, since sparkling wine as we know it today is generally accepted to have been invented and perfected in Champagne, France. Most other sparkling wines in France and in other countries stem from French Champagne. True “Champagne” only comes from the actual Champagne region in France and follows the traditional method for producing it, as well as the traditional grapes for making it. Cava is not “Champagne” and neither is California sparkling wine, even if it is called “Champagne.” We don’t need to go into great detail about the history of Champagne here, but it is probably helpful to know the basics of Champagne to then understand Cava.

There are 3 traditional grapes used in Champagne. They can be used individually, or they can be used 2 or 3 together. The basic, traditional blend of Champagne is of Pinot Noir, Pinot Meunier, and Chardonnay. They are grapes that are indigenous to the Champagne region of France. The method for making Champagne must be adhered to in order for a wine to be officially labelled "Champagne." It is the "Methode Champenoise." This method involves allowing the wine to continue fermenting in the bottle for a period of time (months to years). During this time, the bottles are capped with crown caps (like for beer) to withstand the pressure that is building inside the bottle. The bottles are also slanted down, so the yeasts eventually settled in the neck of the bottle. When the wine is judged ready, the bottles are kept in this position with the yeasts at the neck. Through several different processes, the neck of the bottle is submerged in a freezing solution, which only freezes a few inches of the wine inside at the neck which contains the yeast. Then, with the yeasts trapped in a short plug of ice, the bottle can be turned upright without the yeast swirling into the wine. The crown cap is removed, and as the plug of ice starts to melt every so slightly, the pressure from the gas inside will actually expel the plug. Then, the winemaker can top up the wine with the same wine or can give it a dose of wine with some sugar to increase fermentation or to add sweetness. There are many variations on this step. We are only covering the basics so the essence of real Champagne and the Méthode Champenoise are understood. What is important to know about the Méthode Champenoise is that the bubbles in Champagne occur naturally from the wine continuing to ferment in the bottle, not from some carbonation method of adding CO2 under pressure.

So how does this relate to Cava? Cava in Spain was modelled after Champagne in France. Cava uses mainly traditional, indigenous Spanish grapes; however there are some examples with French grape varieties, such as Chardonnay. Let’s mostly assume though that Cava is a blend of native Spanish grape varieties. The other important point about Cava is that it is made in the Champagne Method. However only producers in the Champagne region may use the term “Méthode Champenoise,” so in Spain it is known as the “Método Tradicional” or Traditional Method.

Then, Cava can come from a few limited, official areas in Spain, not just one area. The most productive area for Cava, and the most renown, is in NorthEast Spain, near Barcelona, or in the area of Penedès. There is also Cava in Rioja, Utiel-Requena, Ribera del Guadiana, and Cariñena. Most Cava in the US or outside of Spain is probably from the area outside of Barcelona, in Penedès, so let us stick to Cava from here. This the home of the major cava brands, such as Freixenet, Segura Viudas, Cristalino, and others. Most of these cavas are made from 2 or 3 grapes. The traditional, native grapes for Cava are Viura (aka Macabeo), Xarel.lo, and Parellada. There are cavas that are all three, or just two, and in some cases just a single grape variety. We will go into various types of Cavas separately, such as Semi-seco, Brut, Brut Nature, Reserva, etc.

Cava is probably the most Champagne-like sparkling wine outside of France that uses different grape varieties than the Champagne ones. There are non-Champagne wines in France that use the same grapes as Champagne, so yes, they can be even closer to Champagne. However, Cava is truly Spanish, and is usually a good value for the price – especially given the Método Tradicional used to produce it. Cava can also be appreciated for its own distinctiveness.

Chablis

Refreshing Northern Charm

One of the most famous wine names in the world, Chablis has suffered from numerous imitators. Fifty years ago there were just 400ha of vineyards in Chablis, but today there are 4,900ha. Both the generic and Premier Cru vineyards have doubled since the early 1970s, and now include areas of Portlandian as well as traditional Kimmeridgian clay. Being further north than the rest of Burgundy, and on a different type of limestone (the aforementioned Kimmeridgian, with some Portlandian), the wines are subtly different in style – a touch more austere with a beautiful fresh minerality that makes them so suited to seafood. Purists believe that only the Kimmeridgian soils, with their traces of marine fossils, should be used. The outlying Portlandian vineyards are designated as Petit Chablis, although the vast majority of production is classified as Chablis, without any vineyard name. Forty vineyards are classified as Premier Cru, however several of these are grouped together to make 11 more commonly-used Premier Cru designations. The seven Grands Crus are clustered together in a group that overlooks the town of Chablis and the River Serein.

Champagne

Northern Star

Champagne-making is the highly refined art of blending base wines into a whole that is greater than the sum of its parts. These component wines come from different grape varieties (the white grape Chardonnay and the red varieties Pinot Noir and Pinot Meunier) and from different villages and vineyards. And because only four or five harvests per decade in this marginal climate northeast of Paris provide the raw materials to make balanced, complete Champagne wines--that is, vintage-designated Champagnes, which must be entirely from the year indicated on the label--most Champagnes also combine juice from two or more vintages.

Blending across vintages is the way Champagne producers are able to maintain the house styles their customers have come to expect. As nonvintage wine accounts for about four-fifths of total Champagne production, it is hardly surprisingly that the reputations of most major houses hinge on the quality and consistency of their non-vintage blends. Not only that, but the better nonvintage Champagnes on the market today are often every bit as satisfying as the typical vintage bottling--and a lot cheaper to boot.

Two districts of Champagne are considered best for high-quality grapes: the Cote des Blancs, whose chalk and limestone soils are ideal for Chardonnay, and the Montagne de Reims, which is ideally situated for growing the red grapes Pinot Noir and Pinot Meunier. The Vallee de la Marne, which stretches in a narrow band across most of the region and is planted to both red and white grapes, is the largest area aside from the Aube district, which lies far to the south, disconnected from the other Champagne vineyards by almost 50 miles and generally producing fruit destined for anonymous blends.

Chianti

A Tuscan Classic

There is more to Chianti than the classic bottle in a straw basket, known as a fiasco, made famous by old school Italian red sauce joints in the ‘70s and Anthony Hopkins in Silence of the Lambs. In fact, Chianti is currently the most popular Italian red wine in America. Known for being a dry red that goes very well with food, Chianti can range in price from $10 a bottle to upwards of $50 dollars for high-end versions. Suffice it to say, Chianti has outgrown its old school straw basket image. In fact, almost none of the Chianti sold today comes in the classic straw basket.

Like most other wines made in the Old World, Chianti derives its name not from the grape used to make the wine, which is Sangiovese, but from the region where it is made. The Chianti region is located in Tuscany, that romantic area of central Italy known for its sweeping landscapes, burning hot sun and its wealth of art and food history. It is from this region that we also get delicious olive oil and Michelangelo’s David.

For a Chianti to be a Chianti, it must be produced in the Chianti region and be made from at least 80% Sangiovese grapes. While most Chiantis are 100% Sangiovese, some winemakers in the region like to blend the Sangiovese with a little Cabernet, Merlot or Syrah to soften the finished wine.

The two versions of Chianti you are most likely to encounter in a store or on a restaurant wine list are Chianti and Chianti Classico. The difference between the two is that Chianti Classico is considered to be a bit more refined and higher end than Chianti; this is because it’s produced from grapes harvested in the best vineyards of the region. Whether the wine is Chianti or Chianti Classico will clearly be labeled on the front of the bottle.

In both versions of Chianti, you can expect a wine that is very earthy and rustic, high in tannins (it dries your mouth out), has a smell and taste that is reminiscent of cherries and strawberries, and is high in acidity, which makes it go very well with food.

While many people love to pair this classic Italian wine with classic Italian food, Chianti goes well with whatever you feel like eating. It’s as much a pizza and pasta wine as a grilled cheese and fries wine.
